Mango and avocado salad



This recipe is excellent served with grilled chicken and or fish. Try it with my Cajun Chicken Recipe


Ingredients: 1 tablespoon apple cider vinegar 1 tablespoon lime juice 2 tablespoons extra-virgin olive oil 2 mangos, cubed 2 avocados, cubed (or 2 more mangoes, cubed) ½ small red onion, diced ½ cup of red peppers (optional) 1 tablespoon of Cilantro 1 teaspoon of sugar Salt and pepper, to taste


Directions: Whisk together vinegar, lime juice, sugar, salt and pepper in a large bowl. Slowly, carefully, whisk in oil. Add mangoes, avocadoes and onions, and toss to coat. Toss with salad. Taste and adjust seasoning to taste. Let stand for 5 to 10 minutes before serving.
